This course introduces the concepts, skills, and techniques for food preparation. Emphasis is placed on development of skills in knife, tool, and equipment handling and applying principles of food preparation to produce a variety of foods. ServSafe, the national certification course and exam for food handling and preparation, will be administered. Basic management skills including purchasing, cost control, and menu development will be covered. Students will gain an understanding of the demands of the kitchen environment. Employability skills and preparation for assessments that lead to the North Carolina Career Readiness Certificate are included. The textbooks, On Cooking and ServSafe Essentials with exam sheet, can be purchased at the Asheville Campus bookstore. Speciality tools, uniforms, supplies of approximately $400-$500 are required. Cost includes an insurance fee of $1.25. (246 hrs)
