About Baking and Pastry Arts
Our Baking and Pastry Arts program is accredited by the American Culinary Federation.
Asheville-Buncombe Technical Community College was the first community college in North Carolina to offer a two-year Associate of Applied Science degree in Baking and Pastry Arts.
Courses emphasize practical application, a strong theoretical knowledge base and professionalism. The program provides graduates with the critical competencies to meet industry demands. Course work includes specialty and artisan breads, desserts, pastries, candies, decorative work, high‑volume production and food marketing.
Baking and Pastry Arts is part of the Department of Culinary Arts and Hospitality at A-B Tech.
Hands-on Education
The Baking and Pastry Arts degree provides students with practical hands-on and theoretical training in the areas of Artisan and Specialty Breads, Petit Fours, Classical and European Pastries, Tortes and Special Occasion Cakes, Chocolate Artistry, Plated Desserts, and Confections and Show Pieces. In addition, the curriculum includes Food Science, Sanitation and Safety, Human Resource Management, Food and Beverage Controls, Marketing, and Nutrition.
